The Role

At Shangri-La, hospitality from the heart defines us. We are seeking a passionate and seasoned Executive Sous Chef to support our culinary leadership. In this role, you will ensure the highest standards of food quality while driving operational excellence across our diverse dining outlets.

Key Responsibilities

  • Culinary Leadership: Act as the primary partner to the Executive Chef in executing the hotel’s culinary vision and maintaining brand alignment.

  • Operational Excellence: Lead and oversee multi-outlet operations, ensuring consistent excellence across à la carte, banquets, in-room dining, and specialty restaurants.

  • Innovation: Drive the culinary agenda with trend-driven menus, experiential dining concepts, and sustainable sourcing.

  • Standards & Quality: Implement and monitor SOPs, quality benchmarks, and plating standards to ensure flawless execution.

  • Financial Management: Manage food cost controls, budgeting, and procurement to maximize profitability without compromising quality.

  • Team Development: Mentor and develop a high-performing culinary team through structured training, coaching, and succession planning.

  • Compliance & Safety: Maintain rigorous food safety and hygiene standards while championing sustainability initiatives.

  • Workflow Optimization: Use lean principles and efficient planning to enhance kitchen productivity and minimize waste.


Candidate Profile

Experience & Expertise:

  • Proven Track Record: 8–10 years of progressive culinary experience, including at least 5 years in a leadership role within luxury hotels.

  • Domain Knowledge: Deep expertise in multi-cuisine operations, high-volume banquet production, and specialty service environments.

  • Commercial Acumen: Ability to balance creative culinary expression with strong financial and profitability goals.
