The Role

We are looking for a passionate Junior Sous Chef (Western Cuisine) to bring their expertise to our culinary team. In this role, you will support the Sous Chef in maintaining the high standards of our Western kitchen operations, ensuring that every plate reflects the sophistication and quality Shangri-La is known for.

Job Responsibilities

  • Kitchen Leadership: Assist the Sous Chef in managing daily operations, ensuring a smooth and efficient workflow within the Western section.

  • Culinary Excellence: Prepare and execute high-quality Western dishes, maintaining strict consistency in flavor, texture, and presentation.

  • Team Supervision: Guide and mentor Commis Chefs and trainees, fostering a culture of learning and professional growth during service.

  • Menu Innovation: Support the development of seasonal menus and the creation of innovative new Western dishes.

  • Resource Management: Monitor inventory levels and assist with the accurate ordering of supplies to minimize waste.

  • Safety & Hygiene: Ensure total compliance with food safety, hygiene, and HACCP standards at all times.

  • Operational Coordination: Maintain a clean, organized workspace and collaborate closely with the wider culinary team to ensure timely service.


Job Requirements

Experience & Education:

  • Education: Diploma or certification in Culinary Arts or an equivalent professional qualification.

  • Experience: Minimum of 5 years of experience in a Western kitchen, preferably within a luxury hotel or fine dining environment.

Core Competencies:

  • Technical Mastery: Strong foundational knowledge of classic and modern Western cooking techniques and ingredients.

  • Resilience: Proven ability to work effectively under pressure and manage multiple tasks in a high-volume setting.

  • Leadership: A professional attitude with the ability to lead by example and inspire junior team members.
