The Role

We are seeking an inspired and highly skilled Chef de Cuisine specializing in South Italian Cuisine to lead our specialty kitchen. In this role, you will be the guardian of authenticity, bringing the bold flavors of Sicily, Calabria, Apulia, and Campania to life. From perfecting Neapolitan-style pizzas to sourcing the finest Mediterranean ingredients, you will lead a dedicated team to deliver an unforgettable dining experience that reflects the soul of Southern Italy.

Job Responsibilities

  • Culinary Leadership: Oversee the South Italian kitchen operations, ensuring absolute excellence in flavor, presentation, and consistency.

  • Authentic Execution: Masterfully create and execute regional specialties, staying true to traditional South Italian culinary heritage.

  • Pizza Artistry: Supervise all aspects of pizza production—including specialized dough fermentation, shaping, and precise baking—to ensure premium Neapolitan-style quality.

  • Menu Development: Refine seasonal menus and create signature dishes that balance innovation with traditional authenticity.

  • Operational Management: Manage daily mise‑en‑place and fresh ingredient replenishment while maintaining strict food cost and waste reduction controls.

  • Team Mentorship: Train and develop kitchen staff to uphold the highest culinary standards and operational efficiency.

  • Strategic Sourcing: Collaborate with procurement to secure high-quality Italian imports, including specialized cheeses, meats, oils, and flours.

  • Compliance & Safety: Maintain rigorous adherence to food safety, hygiene, HACCP standards, and kitchen sanitation protocols.


Job Requirements

Experience & Expertise:

  • Proven Track Record: Minimum of 10 years of culinary experience, with deep exposure to South Italian cuisine.

  • Leadership: At least 5 years in a supervisory or leadership role within a luxury hotel or renowned Italian restaurant.

  • Pizza Mastery: Expert knowledge of Italian pizza making, specifically dough fermentation and wood-fired/stone-oven baking techniques.

Technical & Soft Skills:

  • Cuisine Knowledge: Deep understanding of Southern Italian flavor profiles, traditional techniques, and ingredient sourcing.

  • Resilience: Proven ability to thrive and maintain consistency in a fast-paced, high-volume environment.

  • Business Acumen: Strong grasp of kitchen operations, inventory management, and cost control.

  • Leadership Skills: Exceptional communication skills with a focus on team development and cross-functional collaboration.
