Job Summary

As the Chinese Chef de Cuisine, you are accountable for the quality, consistency, and production of our signature Chinese restaurant kitchen. You will exhibit exceptional culinary talent by leading from the front—personally performing technical tasks while managing all food-related functions. Your role is to coordinate menus, procurement, and staffing to ensure a world-class dining experience that reflects the Bulgari brand’s heritage of elegance and excellence.


Key Responsibilities

Culinary Excellence & Innovation

  • Creative Leadership: Develop and design unique menu applications and artistic food presentations that define the restaurant’s identity.

  • Menu Development: Design daily and seasonal menu items, ensuring they meet the high expectations of a global luxury clientele.

  • Quality Assurance: Personally check raw and cooked products to ensure all culinary standards, flavors, and presentation requirements are strictly met.

  • Operational Oversight: Supervise kitchen shift operations, ensuring compliance with storage, temperature control, and sanitation regulations.

Kitchen Leadership & Team Development

  • People Management: Supervise and coordinate the activities of the kitchen team, managing day-to-day operations and stepping in to perform duties in an employee’s absence if necessary.

  • Mentorship: Identify developmental needs and coach team members to improve their technical skills and knowledge of authentic Chinese cuisine.

  • Cross-Training: Ensure the kitchen staff is cross-trained to maintain operational agility and high productivity.

  • Culture: Build a culture of mutual trust and respect, serving as a role model for professional behavior and culinary integrity.

Strategic & Financial Management

  • Goal Setting: Establish and achieve performance, budget, and team goals that align with the resort’s overall financial objectives.

  • Inventory Control: Manage food quantities, estimate production needs, and coordinate with purchasing to ensure the highest quality ingredients are sourced within budget.

  • Safety & Compliance: Implement company safety standards and diligently manage employee progressive discipline and performance appraisals.

Guest Relations & Service

  • Personal Engagement: Interact with guests to obtain feedback on product quality and service levels, ensuring a bespoke experience for every visitor.

  • Customer Satisfaction: Handle guest concerns with professionalism and empower the team to provide service that goes “above and beyond.”

  • Service Improvement: Set a positive example for guest relations and focus on continuous improvement during departmental meetings.


Candidate Profile

Education & Experience:

  • Option A: High school diploma or GED; 4 years of experience in culinary leadership, specifically within Chinese cuisine and high-end F&B environments.

  • Option B: A 2-year degree from an accredited university in Culinary Arts or Hotel/Restaurant Management; 2 years of experience in a similar professional leadership role.

Core Competencies:

  • Technical Expertise: Deep knowledge of authentic Chinese culinary techniques, ingredients, and regional specialties.

  • Artistic Flair: Ability to create decorative food displays and sophisticated plating that aligns with a luxury aesthetic.

  • Communication: Excellent interpersonal skills with the ability to lead, influence, and encourage a multicultural team.

  • Operational Acumen: Understanding of kitchen operations’ impact on property-wide financial goals.
