Job Summary
As the Director of Food and Beverage, you will lead the daily operations of our world-class culinary department, including signature restaurants, bars, in-villa dining, and bespoke catering. This executive role is responsible for developing and executing departmental strategies that align with the Bulgari brand’s heritage of timeless glamour. You will focus on delivering exceptional guest experiences, fostering a high-performance culture, and maximizing financial performance through innovative revenue-growth and investment strategies.
Key Responsibilities
Strategic Operations & Financial Leadership

Operational Excellence: Oversee the daily execution of all F&B outlets, ensuring strict compliance with brand standards, safety protocols, and service procedures.

Budget Management: Develop and manage the F&B budget, monitoring sales and projected revenue to meet or exceed financial targets while maintaining healthy profit margins.

Asset Management: Oversee the procurement strategy for high-end equipment and supplies, making recommendations for renovations aligned with the brand’s business strategy.

Financial Controls: Implement and enforce rigorous cash and liquor control policies across all dining areas.
Culinary Innovation & Market Positioning

Brand Strategy: Translate the Bulgari business strategy into a localized food and beverage operating plan that meets the needs of the sophisticated luxury traveler.

Trend Analysis: Stay ahead of global culinary trends to introduce innovative products and experiences that ensure a competitive market position.

Revenue Optimization: Identify new business opportunities and challenge existing processes to increase profits and create long-term value.
Team Leadership & Talent Development

Mentorship: Act as a role model, utilizing exceptional communication skills to influence and encourage the culinary and service teams.

Collaboration: Foster a culture of mutual trust and respect through regular briefings, pre-meal meetings, and open dialogue.

Human Resources: Hire and develop a leadership team with strong functional expertise and entrepreneurial spirit. Set clear performance standards and hold the team accountable via the performance review process.

Satisfaction & Retention: Provide “above and beyond” service that ensures guest loyalty and reflects the resort’s ultra-luxury status.

Quality Improvement: Proactively review guest feedback and comment cards to identify areas for improvement and implement swift corrective actions.

Candidate Profile
Education & Experience:

Option A: High school diploma or GED; 6 years of experience in food and beverage, culinary leadership, or event management.

Option B: A 2-year degree in Food Service Management, Hotel/Restaurant Management, or Business Administration; 4 years of experience in F&B or culinary leadership.
Core Competencies:

Luxury Expertise: Prior experience in a luxury or ultra-luxury resort environment is highly preferred.

Analytical Skills: Ability to interpret financial reports and statements to drive departmental performance and ROI.
