Position Summary

As the Chef de Partie – Pastry, you will be responsible for the exquisite preparation of artisanal breads and pastries that reflect the “timeless glamour” of the St. Regis brand. Your role involves managing the full production cycle—from dough preparation and proofing to baking and intricate decoration. You will ensure that every item meets our uncompromising quality and presentation standards while maintaining rigorous food safety compliance. Beyond your culinary duties, you will act as a mentor and role model, assisting management in coaching the team and driving a culture of excellence.


Key Responsibilities

Culinary Execution & Production

  • Artisanal Baking: Prepare a variety of breads and pastries, including doughs, fillings, and decorations, according to established recipes and production sheets.

  • Quality Control: Monitor the variety, portion sizes, and visual presentation of all baked goods throughout the shift to ensure they meet St. Regis standards.

  • Resource Management: Safely utilize baking tools and high-end kitchen appliances; inform the Executive Chef of excess inventory to assist in planning daily specials.

Food Safety & Operational Excellence

  • Compliance: Maintain detailed kitchen logs for food safety programs and ensure strict adherence to personal hygiene and food handling policies.

  • Equipment Monitoring: Regularly check kitchen appliance temperatures and food storage conditions, reporting any technical issues to management immediately.

  • Safety & Security: Follow all company safety procedures, reporting any injuries or unsafe conditions to maintain a secure working environment.

Team Leadership & Professionalism

  • Mentorship: Serve as a departmental role model, assisting in the training, motivating, and coaching of junior associates.

  • Collaborative Support: Develop positive working relationships across the kitchen team to reach common goals and handle sensitive issues with tact and respect.

  • Communication: Use clear, professional language with colleagues and guests, maintaining the sophisticated etiquette expected at a luxury resort.

  • Personnel Management: Assist management with administrative tasks such as scheduling, evaluations, and, when necessary, counseling or disciplinary actions.


Physical Requirements

  • Ability to move, lift, or carry objects weighing up to 25 pounds without assistance.

  • Capability to navigate sloping, uneven, or slippery surfaces commonly found in resort environments.

  • Flexibility to reach overhead and below the knees (bending, twisting, and stooping).

  • Ability to stand or walk for extended periods during a shift.


Candidate Profile

Preferred Qualifications:

  • Education: Technical, Trade, or Vocational School Degree in Culinary Arts or Pastry.

  • Work Experience: At least 2 years of related experience in a high-end pastry kitchen (ultra-luxury resort experience is a distinct advantage).

  • Supervisory Experience: No formal supervisory experience is required, but a natural aptitude for leadership and coaching is essential.

  • Attributes: A proactive attitude, attention to detail, and a passion for bespoke hospitality.
