Job Description

A Commis Chef (Pastry) is responsible for preparing and presenting high-quality pastry items and desserts to deliver an excellent Guest and Member experience while consistently contributing to departmental targets.

What will I be doing?

As a Commis Chef (Pastry), you will prepare and present premium pastry dishes to ensure an exceptional guest experience. You will also be responsible for executing all mise-en-place and contributing to kitchen efficiency. Specifically, you will perform the following tasks to the highest standards:

  • Food Production: Ensure consistent, top-quality pastry production in line with Hilton’s premium standards.

  • Kitchen Operations: Prepare all mise-en-place for relevant menus and execute kitchen tasks in a timely manner.

  • Hygiene & Safety: Keep all work areas clean and tidy to prevent cross-contamination. Meet all health, food safety, and hygiene regulations, while reporting any maintenance or hazard issues.

  • Cost Control: Support kitchen profitability and revenue goals through effective food portion and cost controls.

  • Collaboration: Provide proactive support to the kitchen brigade, assist other departments when necessary, and maintain positive working relationships.

  • Compliance: Comply with hotel security protocols, fire regulations, and health and safety legislation, while remaining environmentally conscious.

  • Target Alignment: Stay aware of departmental goals and actively strive to achieve them as a collaborative team member.

What are we looking for?

A Commis Chef (Pastry) serving Hilton brands works passionately on behalf of our Guests and alongside fellow Team Members. To successfully fill this role, you should maintain the following attitudes, skills, and qualifications:

  • Experience: Previous experience as a Pastry Commis Chef or Pastry Apprentice Chef.

  • Education: NVQ Level 1 qualification and completion of an accredited commercial cookery course or trade apprenticeship.

  • Certifications: Proof of completion of a basic food hygiene course.

  • Core Competencies: A positive attitude, strong communication skills, and the proven ability to work under pressure, multi-task, and follow instructions within a high-standard environment.

  • Passion: A genuine love for the culinary arts and pastry, with a strong desire to learn and succeed in a hospitality career.

Preferred Qualifications

It would be advantageous in this position for you to demonstrate:

  • An NVQ Level 2 qualification.
