Position Summary
As the Chinese Head Chef, you will work closely with the Executive Chef to lead and manage all aspects of the kitchen operation. You will be responsible for delivering an exceptional dining experience for our Guests and Members, ensuring the highest standards of authentic Chinese cuisine while managing food provisions, addressing guest inquiries, and optimizing departmental costs.
Key Responsibilities
Kitchen Management & Quality Assurance

Operational Leadership: Manage all kitchen functions, including day-to-day operations, administrative duties, and quality control.

Consistency: Ensure the consistent production of high-quality food across all hotel outlets, adhering to brand standards and local legislation.

Menu Innovation: Contribute to menu creation by incorporating Guest feedback and staying ahead of modern culinary trends.

Inventory Control: Monitor food quality and ensure all ingredients are stored correctly to maintain freshness and safety.
Team Leadership & Development

Resource Management: Organize staff rotations and schedules to effectively meet business demands.

Training: Support Hilton brand standards by training, assessing, and mentoring the kitchen brigade.

Motivation: Lead and organize the team to foster a high-performance, motivated, and well-disciplined environment.
Guest Relations & Financial Performance

Guest Engagement: Respond to guest queries in a timely, positive, and efficient manner; manage customer relations in the absence of the Executive Chef.

Cost Control: Manage food costs and improve gross profit margins without compromising on quality or standards.

Compliance: Adhere to all hotel security, fire regulations, health and safety, and food safety legislation.
Candidate Profile
Experience & Skills:

Technical Qualifications: Relevant trade qualifications and a strong background in authentic Chinese culinary arts.

Management Ability: Strong supervisory skills with the ability to plan, organize, and lead a diverse team.

Resilience: Ability to multi-task and work effectively under pressure to meet strict deadlines.

Communication: Excellent interpersonal and communication skills to maintain positive working relationships across departments.
Preferred Assets:

Industry Background: Previous experience in a similar Sous Chef or Head Chef role within a luxury hotel setting.

Creativity: A passion for high-quality food production and an innovative approach to dish presentation.

Tech Savvy: Proficiency with computers, particularly Microsoft Word, Excel, and Outlook.
